So this is my first time building a PC and I'm looking at about an 800 dollar budget. I've spent some time on PCPartPicker.com and just keep asking myself the same question. Will this thing be a piece of junk? Am I overlooking a serious bottleneck? Should I go for ATX or MicroATX? Will my CPU not be compatible with my motherboard? If currently, I'm thinking about this build.

Will this be able to run modern games at a decent FPS? I'm not looking for the highest gaming experience possible (obviously). But can this thing put up 60 FPS in most modern games? And if not please tell me I'm an idiot and rework my whole build. I will defer to the good people of the LTT forum. Any suggestions are welcome. And thanks in advance for anyone who puts together something in PCPartPicker and spending the time to do that. I really appreciate any and all help.

Build is pretty unbalanced. You have an APU but picked out a GPU as well, you've got thermal paste which isn't needed, a horrific PSU, a motherboard that still might not work (although slim chances) with that CPU. Additionally you've got a $90 case and yet only put $60 towards a pretty horrible monitor?

I own that board and that CPU, they're decent. Though, I'd change a few things. Especially the keyboard. Redragon is known to come with crap software and build quality. Try this, the monitor is Freesync supportive and the keyboard is much better as well: https://pcpartpicker.com/list/vF6Ymq

Don't go for option 1, it's awful compared to what else suggested here. The APU lacks solder inside the IHS and SMT as well so it only has 4 threads. It certainly performs much worse than the Ryzen 2600 and doesn't make sense to buy with a GPU.

At least get option 2 but I don't know why you want that MSI board and that GPU. While I own the Gaming Pro, it's not exactly all that great of a board. The Gigabyte I linked to has an M.2 shield and is just better over all IMO for the same price. The Armor cards aren't all that great either, Armor is not a good cooler of MSI generally. Stick with something else. The other bits don't look too good either. Rather cheaply built PSU, garbage keyboard...

The build you came up with the IPS monitor and the Gigabyte board compared to mine was great, and only costed like $40 more than this final option #2. Not sure why you downgraded it all, just buy that build. You can't go wrong with it.
