I think an AMD R5 1600 or 2600 will do the job for your needs.

Is AMD better than Intel? 'Cause I got to a computer shop to ask for some ideas, and he said to "leave the AMD idea because they are terrible with temperatures, and if I overclock an AMD I'm risking to burn also the MoBo"... Dunno if he was serious or not, I hope he wasn't haha

That is such a bullshit. The only reason he said that is because Intel is more expensive and he would make more money by selling it to you. I'm running a 2700X with STOCK cooler overclocked to 4GHz and my temps are between 35-50 depending on my work. Wow I want to falcon punch that guy so hard

LOL.

I'll explain: I've never had a tower pc, nor I've assembled a pc before. I only had a laptop, but for uni I need some more power, so I thought to buy components and to build a good bang for the buck pc, possibly not over 700-750€. I saw some Ryzen and i5 comparison videos and I saw that Ryzen loses a lil' bit of FPS in games, but at the same time it's still playable and in productivity meanings, works better than Intel in some cases.

Do you think that, if I get the 1600 or 2600, I should need a non-stock cooler? I would think about OC, but I've never done it haha

No both the 1600 and the 2600 have good stock cooler. I think the the 1600 has a better one iirc.

Ok, cool... I'll see how I can do a build and then I'll post here to get help or, probably, to be flamed for my inaccuracy hahaha

@DrFebusInc

This is just about what you can get

The case doesnt really matter, up to your preference, I dont know anything about cases but the be quiet pure power psu is like the cheapest I know that doesnt suck. A 1050Ti should give you good enough FPS for 1080p. The SSD is for your OS and heavy games like Squad or Arma 3 that take like ages to load.

Sounds pretty good to me! I'll probably use a 250GB SSD to save a bit and a case from CoolerMaster that I know it's 25€ in a friend's shop, but for the other things seems quite good! Thanks, mate :D
