i have a define R6 and recently decided to go back to aircooling , so what would be the best aircooler for my 2700x

Assuming form the sig you have a custom loop right now some of the best large air coolers would be the NH-D15 and Dark rock Pro 4.

Then if your looking to get as close as possible in terms of performance to a custom loop the large dual tower cooler would be your best bet, just double check your clearances around the socket.

ordered the dark rock pro 4, hopefully it doesnt block any ram slots

It has over 40mm of clearance if you shift the front fan up or move it around to the back side of the cooler.

i read you wont be able to use the closest ram slot to the socket

i have vengance RGB and the crosshair C7H

Depends how extra tall they are, the Pro 4 did have a notch cut out the cooler so you can fit the RAM under it. This one has the front fan placed up a little higher.

looks like it should fit if the TridentZ does,

no biggie either way as ill just return my ram and buy new sticks
