If I had all the money in the world and the electricity bill of an ant, I would totally go for an overkill build.

Depends on what I would use it for.  Gaming, probably an 8700k+dual 1080ti all overclocked in a custom loop. For productivity, probably a 7980XE with as many Titan Xps I can cram into the case
