My new pc:
 

i5 8600k
Asrock 370 Extreme motherboard
heatsink: Noctua NH-D15
 

room temperature:27°-29°
 

While in idle the detection of the cores gives me (without OC) a 30 ° / 31 ° I think acceptable - also in consideration of the ambient temperature, my doubt arises from the detection of temperatures under stress (and with very light test OC) with Prime95:

Already after about ten minutes, in Blend mode, the processor cores touch points of:

78° - overclock 4300 MHz (1.184 Vcore)
79° - overclock 4400 MHz (1.184 Vcore)

According to you, considering the ambient temperature is not exactly optimal (5 ° - 7 ° more than the 'classics'  22°) the results (also in consideration of the excellent heat sink) can lead me to think of an excessive qt. used thermal paste?

Or can I avoid disassembling, cleaning up and putting the dough back?

Looks to be fine. Your parts will generally run a bit hotter then ambient at times which is normal, and 78 is fine :)
