I'd get something like this, maybe step the HDD up to 2Tb instead 1.

With that budget I'd try go for a new Samsung 970 NVME ssd, but I agree with Taf the Ghost, if you're video editing you might want a 2tb storage to hold the files etc.

Irish in Vancouver, what's new?

If you are already buying an after-market cooler, get the 2600 and overclock it. The only reason to get a 2600X is the better cooler really (or the factory overclock if you do not want to OC). No point in spending extra money.

Replaced 1TB drive with 2TB. Replaced SSD with a reasonably priced one. Replaced 1060 with 1070Ti. Replaced overkill PSU with a good quality one.

Asking this as polite as I can, cuz I am curious really...

If you were planning on buying a GTX 1080, why don't you?  Or rather, why settle for a 1060?  Unless your financial situation changed, a 1080 is only $30 more now than when the 1080Ti came out and pushed it's price down to $500.  Zotac has a mini for $529.99 on Newegg  Or spend the original $500 on a 1070Ti maybe?

Sorry, but if you have a dream machine you wanted to build, the GPU market isn't near as bad as it was.  Realize your dream, man :)
