id get a single ssd. Your not going to notice the difference, and bigger drives are faster.

two crucial mx500 500gb ssds are cheaper than a 1tb version.I mainly use my pc for gaming.

Just don't do raid.

Either one or two SSDs will work fine.

Unreliable, unless you use a professional hardware raid card, which will cost hundreds or thousands of dollars.

You won't notice any difference in speed anyway, since I bet none of your programs saturate a sata 3 SSD.
