Only go single stick if you plan on adding another 8gb stick within a few months otherwise go 2x4gb

Main PC = I5 7600K @4.5ghz, Asus Gtx1070, 16GB DDR4 3000Mhz, 480GB SSD, Msi Z270 Mobo.

Will it be faster than a 6300 and an an r7 240 ? Yes .

Is it in any way optimal or getting the most out of that chip ? No . That single channel RAM is going to severely limit gpu bandwith and cripple graphics performance . You're much better off getting 2*4GB

AMD Ryzen R7 1700 (3.8ghz) w/ NH-D14, EVGA RTX 2080 XC (stock), 4*4GB DDR4 3000MT/s RAM, Gigabyte AB350-Gaming-3 MB, CX750M PSU, 1.5TB SDD + 7TB HDD, Phanteks enthoo pro case

The 1x8gb isn't so much an option as it is me trying to delay purchasing a $200 16gb stick
