Windows 10 versions go EOL after a while when a newer build is released. This means you can't stay on older builds because you want to as you won't receive updates anymore.
Windows 10 version 1507 and 1511 are already end of life, no more security patches. Version 1607 goes EOL in april this year and 1703 in october.

If you want to stay on an older build, you need to buy Windows 10 Enterprise LTSB.
The only exception to these rules are the Clover Trail Atom CPUs, they are supported on 1607 until 2026.
