I have a ga-z170x-ultra and was looking to get a 7600k but when i look it up on pc part picker it says, "Some Intel Z170 chipset motherboards may need a BIOS update prior to using Kaby Lake-S CPUs. Upgrading the BIOS may require a different CPU that is supported by older BIOS revisions." If i get the 7600k will the my motherboard work with it?

Maybe, maybe not. 100% depends on the BIOS version the motherboard ships with. If you have not yet purchased the MB, just get a Z270. If you have, you'll need a Skylake CPU to flash the latest BIOS.

Needs updating, just go to the Gigabyte site and download the software and latest bios, run the bios update from file, reboot, shut down, swap CPU's reboot, enter bios, redo bios settings

would i use intel bios update or what?

Why would you use Intel's BIOS? It's not their motherboard...
