You may want to go for the i5 8400 and wait for B360 boards to come out.

If you're choosing a K serie CPU, you need a Z motherboard otherwise you CAN'T overclock it and therefore there's no meaning to get the K version in the first place.

Jump down to a 7600 or even 7400 and grab a 1060 if possible instead.

Yes it will be good for 1080p, but get a SSD for a boot drive. Like this: https://pcpartpicker.com/product/yVH48d/western-digital-green-240gb-m2-2280-solid-state-drive-wds240g1g0b

What is the difference between a SSD and Hard drive?

an ssd is much faster than a hdd and will make your rig much more responsive, but costs more. what's your budget?

Around €600, but what does the ssd make faster? And is it important for the gameplay?

boot/loading times, not important for games but makes your rig feel much more responsive as a boot drive.

How much fans do you need?

the ones included should be enough, if the temps go out of hand you can get a couple more to help manage it.
