Upgrade path?

Right now I have a 6600 non k, on a b150m motherboard. I also have 16gb of ram an ssd and a gtx 1060 which all serve me well. Im wondering if i should go for a r7 1700 this christmas, go to coffee lake probably 8700/8600k idk yet, or save for a bigger upgrade down the line? At christmas I should have a solid 475 budget. If ryzen goes down significantly which ive seen happen should I go for that or just save for a whole new upgrade?

Depends on what you are doing with the PC. If you dont stream (output) then I'd get a better graphics card or grab a used quad core i7 from those upgrading to Coffee.

What about a xeon 1151 socket that acts as a low cost i7? im talking 4 cores and 8 threads 3.7 boost clock

You can use them, but they are rare since most are still in service in servers.

You shouldnt go Ryzen or Coffee Lake.

because it's a waste of money. Ryzen would be a downgrade in terms of IPC anyway, that's just stupid. Coffee Lake isn't going to be enough of an upgrade to warrant the cost. If you really NEED a CPU upgrade, grab a 6700/7700 or 6700k/7700k. There's really not much need to upgrade from your current CPU though anyway.
