Is it possible to extend one screen and have it on 1080p whilst having the other monitor on 4k? 

Or must I have 2 4k monitors in order to have 2 displays :III ?

yup. just make sure whatever GPU you are using supports 4K and also supports at least 2 monitors (almost all should).

Yes, you can use different resolution monitors with ease. In the control panel, the 4k display will look 4 times as large as the 1080p one because it was 4 times as many pixels. But both will connect and be useable just fine.
