Where do I connect these?

That first one is the temp probes itself you place that where you want to get your temp readings, in the fins of the CPU heatsink, VRM heatsink, Etc.

Personally I would put one in the fins of the CPU heatsink, make sure it doesn't interfere with the fan at all, and the second one as front intake unless you have a GPU in the system.

Can I put them on the back of the motherboard (just behind the CPU)

Yes you can do that since the probes are wrapped. just be sure to use electrical or kapton tape to stick it down into place since it will give the most accurate reading when in contact with the surface.
