I will be using this for After Effects, Sony Vegas,GMod & Minecraft Streaming/recording(With shaders if possible). I will be pairing this with a 1080p Monitor, a 1600x900 monitor, and a 1680x1050 monitor. I already have storage, and I will be reusing my current case.

 

Edit: I plan on overclocking the Processor, and possibly the GPU.

PSU wasn't enough, GPU was overpriced, the RAM is cheaper, and you forgot the case and storage. GMod and Minecraft are extremely light games. I would play them on a P4 and a 9800GT. AFAIK editing is mainly CPU, and a little GPU, in which case you have Open CL to use.

The 5570 is still a good card. It will max out GMod and Mincraft I guarantee you. Put more cash into a better board for OCing, more RAM and to an SSD for a boot drive, then you could partition your 1TB drive in half and run the separate 500GB partitions along with your other drive in a RAID 5. Open CL will also work fine on the GPU.

Yes thats true, but I cant play shaders which I have been looking forward too using, also If I want to play a new games that come out, and the 7870 GHz is a card that will last me a while and will be a beast with OpenCL.

True. Its your call. I would take my provided build and then save up for a new GPU. Work a month or so at mcdonalds and get ~$150 to use for a 7870.

Not really old enough to work there xD. But I could go around raking up leaves. What do you think? Also the 3 monitors will probably push the 5570.

I would rather save up for an SSD, it would take less time. I could partition my boot drive to have a 100GB section and then just copy that to the SSD once I get it.

Yer get the 7870 it will be better in general
