Adding a gpu to this ek kit

Compression fittings: EK-ACF Fitting 10/13mm - G1/4 Nickel <----- buy two more of these

 

Tubing: EK-DuraClear 9,5/12,7mm (3/8'' - 1/2'') 2 meters <-- this really should be enough, but buy some more if you don't want to risk it.

But you might even not need to buy extra tubing depending on the size of your case.

Supports a 360 rad but only 2 fans in the front :(

I would probably go for the 1700 and OC it. It looks like a better deal, with more cores/threads. If you want to be sure though I would google some ryzen 1700 reviews and see how it compares to the 6800K in different work loads.
