Sata and NVME are different protocols, while M.2 is just a mounting support. It is not intercompatible if not specified by the vendor. Also, M.2 SSD, either sata or nvme, have different sizes/length (2280/22100/2232..)  so you must choose the ones supported by your PC.

You want M-key for PCI-E, the B-key will do just mSATA

No, NVME M.2 SSDs are PCIe, they will not work in a sata M.2 port.
