RAID 5 is still available for both NVME M.2 and SATA SSD through the chipset.  Nothing has changed.  You just now have an additional option of VROC, which allows for RAID directly through the VROC controller on the CPU as well.

You really shouldn't be using intel raid, its pretty bad. For non bootable raid use software raid. You can also boot from raid in other oses like linux, freebsd, and osx. 

 

If you really want a bootable raid 5, get a raid card. They support nvme drives

I've had the same experience.  I've never had a software RAID fail, but I've damn sure had multiple RAIDs through BIOS go tits up on me.  If you ever have to clear CMOS and you forget to unplug your drives before doing so with Intel RAID, you can kiss your RAID good bye a lot of times.
