can I get another stick that is the same capacity, model, and frequency and just plug it in? or do I have to get a new set that comes with two 8gb ram sticks.

You can just buy a new stick and put it in but we would need to know your computer specs before we can say anything for sure

It will work just fine.

If your motherboard can take 16GB+ of RAM, you would be fine to get another stick of 8GB RAM (assuming it doesn't specifically require ECC memory).

Keep in mind though, this applies to 99% of the scenarios, but you might fall into the 1% that has memory incompatibilities. Be sure to buy from a store where you can return something in case it doesn't work.

Just make sure that you're getting unbuffered RAM for unbuffered slots. ECC is cheap at the moment and will work in a non-ECC board as long as the buffers match.
