What os should i Use

I just got my setup working but now it needs a suitable OS to run on. this is the hardware:

Itel s5000psl motherboard

Daul Intel x5450 3.0ghz 8 core total

16gb of ddr2 667mhz ram

I am thinking regular old windows 7 home premium but idk if it will work or if something newer would work please help asap

Windows 10 will work but ya know, if you like whindows 7 more then go for it

sorry about the category mix up I didnt realize and going to attempty to use for gaming but if its not suitable then just use it as a gameing server pc but woulkd still like it to run a familiar form of windows
