Is there any way to know if a motherboard will be shipped with an updated BIOS?

not that i know of, but it depends on your mobo if you can update it without a cpu. gigabyte has Q-flash to do that and other brands have other names for that.

Is there any reason why you'd buy a brand new Skylake motherboard for a Kaby Lake?

Oh, I didn't even know it was possible to update without a CPU.  Thanks for the info.  Z270 boards tend to be more expensive (at least now), and I'd rather keep my options open.  Now I know what to look for.

Where you buying it from? Give their support a call and politely ask them if they'd mind opening your board up and flashing it before they ship it to you. You'll find most places are surprisingly helpful.

just so i can support my statement that you can do this, i found this.

 

the Q-flash part

"Q-Flash Plus

GIGABYTE Q-Flash Plus allows users to update to the latest BIOS using a thumb drive without the CPU or memory needing to be installed.
Do you have the latest CPU supported by your GIGABYTE motherboard but do not have the latest BIOS installed yet? This is no longer a problem with the new Q-Flash Plus feature. By simply downloading the latest BIOS and renaming it on a USB thumb drive, and plugging it into the dedicated port, you can now flash the BIOS automatically without the need to press any buttons or even the need of onboard memory or CPU. Utilizing the ITE EC 8951E controller, GIGABYTE X99 motherboard BIOS can be updated even if your system is unable to boot. An LED next to the EC controller will notify you once the procedure is complete and you are ready to boot your system normally."

Obviously Amazon won't but Newegg might if you explain its for a Kabylake. They might charge you a fee though.
