Don't think you can do while keeping it active other than disable location services and such on the device.

Yeah that's mostly true. There's a solution but it requires your phone to stay where you want it and then just setup call forwarding to a friend's phone.

I guess that's half of a work around then, I'm pretty sure there's probably a way if jailbroken but my guess is it would be quite complicated.

When I go on bike rides I would rather have my mom who stares at the find my iphone shit not know where I am, so for example I could set my location to the beach while I go somewhere else.
