question do you need lets say 3 graphics card for 3 monitors? or if you have 3 monitors and only 2 graphics cards  how does that work?

2 monitor connected to 1 card and 1 ther other monitor to the last card. Depending on the card, a single card can do multi monitor up to 4 or more.

You only need 1 GPU. All monitors must be connected to the GPU.

I do it with 2 cards or 1 card. Used to switch back and forth quite a bit. It depends on the card aswell.
