TL:DR - sub $700 gaming build with an AMD GPU

Want help making a PCPP for a gaming build. This build will be used in a multi-monitor setup, using different monitor resolutions so I want Eyefinity so I can stretch my games over them. It's a 21:9 1080p in the middle flanked by a 1080p monitor on each side. I don't play Triple A titles, only easier stuff like CSGO, MOBA's, other team shooters, Rocket League, and a few other survival open world type games as well as Minecraft. I'm hoping I can maybe fit a Fury in there, cause they are only $260 on eBay. My budget is less than $700, hopefully around $650. I'm considering trying to fit in a E3-1231 v3 and a Fury into my build. I already own a kit of 16GB Hyper X Fury Blues DDR3 so if I go DDR3 I save like $70-80 instead of buying a new kit of DDR4 on a newer architecture CPU. Just looking for some different options. Any help appreciated.

MSI GE72 Apache Pro-242 - (5700HQ : 970M : 16gb RAM : 17.3" : Win10 : 1TB HDD : Razer Anansi : Some mouse) - hooked up to a 34UM58-P (WFHD) in dual screen

I'm a bit of a newbie at this but:

I think switching the GPU with a GTX 1060 6 GB would be good. Or is it?

With the money left over, a better case or power supply could prove beneficial. I think.

Hows this, I mean you don't normally use a Xeon for gaming, but of course you still can, but I think you should just go with a 4460 just because its cheaper and a little more ideal for gaming. I did crossfire two RX 460's. This of course should be plenty for gaming. I know the price is not exactly what you wanted, but I did also add in a FULLY MODULAR power supply, which actually works quite well as I have heard from some, I normally use this in most pcpartpicker builds because there is really good reviews on it and good reactions. Yea this power supply is also overkill, but I chose it because like a 650watt was more than a 750watt so I decided to choose that. Enjoy building your PC!

HE has a DDR3 ram already.... and no DDR3 does not work with skylake @rip

you can use ddr3 with skylake cpus, there are ddr3 skylake motherboards out there. its just that intel claims that we should use 1.35v ddr3 dimms instead of 1.5/1.65v dimms(which many of the ddr3 skylake mobos have listed as compatible).

CPU: AMD Ryzen 5 5600X Heatsink: Gelid Phantom Black GPU: Palit RTX 3060 Ti Dual RAM: Corsair DDR4 2x8GB 3000Mhz mobo: Asus X570-P case: Fractal Design Define C PSU: Superflower Leadex Gold 650W

I can actually get the 1231v3 for $210 USD at my local MicroCenter which was one of the main reasons I was considering it.

The only reason I don't like that plan is because of VRAM. VRAM doesn't stack, so it would only be 2GB of VRAM for me. And if I'm running a larger surround setup, then 2GB will not be enough for some titles. The resolution I'm running is somewhere like 75-80% of 4K I believe. Just imagine a 4K monitor that you pull super far on the X-axis.

PowerColor Red Devil RX 480 would be better.

The 480 would definitely be better than a 1060 for me, but the Fury outperforms the 480 by a decent margin, and considering they are around the same price ($260 for the NEW in box Fury and ~$250-260 for an 8GB 480) I would choose Fury.
