How would I order them? Order one, test temps. Order one more, test temps? Wouldn't I always end up with one more than I need or the full configuration?

No, just stick with the stock case fans first and see how that performs. We can help you out with what should be changed with your load temps.

No, it looks like some generic fan that Phanteks doesn't sell on its own.
