Does this system need two GPUs?

You can't run Fallout over 60FPS, so a single 1080 will suffice there and DOOM can run will with a in single 1080 in 100 frames, it's only hitman that may struggle to get over 100fps with one 1080 if you are going for high-ultra settings if I recall.

I'd say hell yeah if you can afford it;

But my sensible side says go look at benchmarks and see how a single 1080 does alone at 1440p 144Hz

Go single card 1080. Would say a good 1070 might even do the trick.

 

If possible always avoid dual GPU. Too many depends on support from creator and Nvidia drivers, and it might even underperform compared to single card.

A single 1080 should do you fine unless you want to go Titan X Pascal. 1080 would be more sensible.

I do not know.

I would go on youtube.com and search up "1080 1440p benchmarks" and see how it does from there, because I do not know offhand how it goes
