Older Motherboards and DDR2 Memory

I've never previously paid much attention to overclocking, memory compatibility/timings, etc but have recently picked up a couple of older G33 and P45 motherboards and various DDR memory sticks to build some budget rigs and learn how to overclock without blowing up $2,000 worth of hardware.

I'm having no luck in getting the memory to work with any reliable stability.  Is it true that from that era (2006-2008, or even now for that matter) that some motherboards and some memory will simply not be compatible?

An example: I have a Gigabyte EP45-DS3R board that simply refuses to cooperate with an Apacer DDR-800 set of memory sticks.  The board supports memory way beyond 800mHz, and the memory I have is about as plain as you can get DDR2 800mHz 5-5-5-18 1.8v.  I've tried upping the voltage, lower speed to 667mHz, etc.  Same problem with a set of Kingston Hyper X DDR2-1066 sticks.  Conversely, this board is happier than happy with a set of Mushkin 5-4-4-12 DDR2-800 sticks at 1.8v.  And this is all before I try any overclocking.

Any suggestions would be helpful.

some motherboard just wont work with some memory and those sticks could also be broken if you dont have another motherboard to test that they are fine with and you have made sure they work

I spent $2500 on building my PC and all i do with it is play no games atm & watch anime at 1080p(finally) watch YT and write essays...  nothing, it just sits there collecting dust...

Builds:

The Toaster Project! Northern Bee!

The original LAN PC build log! (Old, dead and replaced by The Toaster Project & 5.0)

I had one of those boards. only ran GEIL BlackDragon DDR2 800 ram well. could never reach 1000Mhz with it but found it stable at 978. no increase in voltage.
even had DDR2 1200 ram that wouldn't even run at that speed.

luck of the draw.
