Yes, I get that, but why did performance go down as opposed to stay the same?

The gpu is way too fast for your cpu to keep up.  Both your cpu and previous gpu came out in 2013, so together they like buddies, who likes to jog with each other and both are at equal pace. Now enter 1080, and your old cpu is now basically doing jogs with Usain Bolt. Your 1080 sprints off into the distance while your cpu is still at the start line. And now your gpu has to wait for the cpu to catch up. It's a unbalance setup, but games plays a part too. So just accept for what it is now, and once you upgrade the cpu (get 6700k or 6800k), then balance for your setup, should be restored.

(hopefully something decent such as Avast not Norton)

Since WHEN Avast is decent? Everything is decent, but not Avast.

Malwarebytes is excellent for scanning, but not for a "lifetime usage"...disobeying orders.

On the topic, most likely....driver or drivers are the problem.

I heard that coffee's good for my sex life.

It isn't.

It kept me awake through the whole damn thing!

I actually had to participate.

Wow this is weird. I really thought there might some problems with heat maybe. Ok I still don't believe that your CPU isn't up to the task. Maybe it is some weird driver or support problem because the 1080 is still a fairly new card.
