I'm thinking of doing SLI with a 6700k. Will I be able to get 2-way with the CPU, or should I go for an older extreme edition?

6700k is more than capable to do 2 way sli, just make sure your power supply can handle it and you have a decent motherboard

Yeah but they can run at 8X perfectly fine

get a mobo that supports 2-way SLI, and you're set.

 

for SLI its more so looking at the mobo being verified, than at the actual cpu.

(if the mobo will do it, so will every cpu you can drop in the mobo)

 

as for the lanes:

a gpu will take "up to 16 lanes"

 

nvidia gpu's can go down to 8 (because nvidia...)

and amd gpu's go down to 4 (which... any less than 4 is probably recipe for disaster at some point...)

They can take up to 16 PCI-e lanes, but a single graphics card can even run on 1 PCI-e lane.
For SLI you'll need at least 8 PCI-e lanes per graphics card.

if you can find an LGA1151 motherboard that will support 4-way crossfire.

Not at all, especially if you buy from AMD. nVidia locks the firmware to only run with 8 lanes or more, but all current graphics cards are theoretically able to run comfortably on 4 lanes of pcie 3.0 (or 8 lanes of pcie 2.0) and AMD does not enforce any limitation.

There are also a couple of Z170 boards with plx chips.

Then it would even be possible to do tripple sli.

But i wouldnt recommend it.

 

I think that Nvidia also doesnt officialy support tripple and quad sli with 1080´s?

It will work but with some hassle i guess.

it depends on what you mean by "running multiple graphics cards" . In theory , as many as the number of pcie slots on your motherboard . 

But for your cpu :

SLI : 2-way , or up to 4-way if you have a motherboard with a fancy PLX chip ( but considering the price of those , you're better of spending on more powerful cards )

Crossfire:  Up to 4, by using 4x/4x/4x/4x . 

 

All this is considering you have a z170 motherboard that supports that many graphics cards
