i3 or 6 Core Xeon?

i3 6100 vs Xeon X5650 for streaming games at 720p. I'll be pairing both with 16 GB of memory (2400 MHz for the i3) and a cheap cooler. Both configurations are about $250 USD. Any thoughts?

They can both do it well. But you can squeeze in an i5 with 250$.

i3  because better compatability

I'd go with the i3 as you'll have the ability to upgrade to an i5 or i7 down the road. You also get all the modern features that skylake has, while with the xeon, you are stuck with stuff from 2010.

I'm getting a Z170 MoBo for upgrade reasons if i get the i3, so not really.

if you get an i5 you won't have to upgrade to anything...

are you expecting some sick breakthrough? you can get a locked i5 this gen, OC it and sit pretty for next 3 gens.
