Will a 6 + 2 pin work with a 8 pin

If the 8 pin in question is a GPU, yes. The 6+2 is meant to work on either 6 or 8 pin connectors

As long as it's the right cable, I assume PCI-E.

 

Dont confuse PCI-E with CPU cables though.
