So, I have undervolted my i5 3570K to where it runs @3.8GHz and 0.936V. What are the advantages of undervolting?

Less heat, noise and power consuption

Thanks guys. I wonder though. Why when I set my voltage offset to -0.200V does it stay the same? Does it have to do with SpeedStep and the C-states?

If the chip won't function properly when it automatically takes off .2v, then it won't. Voltage offset only works if the system can handle the offest

Yes.
