Hello!

For past half year I've used multiple Minecraft Hostings, but now I want to get an Dedicated server for my Network.

I don't want anything OP, something simple and reliable. Right now I'm looking at this (I need just 32GB, because in all network are Max 100 players online..):

Intel i7-4790K

4/8t

4,0 / 4,4 GHz

32 GB of RAM

DDR3 1333 MHz

2 x240GB of SSD SOFT

Or this:

Intel  Xeon E5

E5-1620v24/8t  

3,7 / 3,9 GHz64 GB of RAM

DDR3 ECC 1600 MHz2 x2TB  SOFT

Is this going to be good enought for me? As I said, I would have about 4 servers with avg 60 players online (in all network)

If you do go with the 2nd build you can save money by getting non-ECC memory. Also is that 50ping just by yourself or while under load. If you upload a file like a youtube video and don't do any network optimizations your ping will probably suffer heavily.

Whatever build you go for, I'll recommend adding a VM for pfSense or something similar that can do advanced QoS to prioritize traffic from/to the game servers. You can use ESXi or similar to make it a host (so you only need one box) and make 2 VMs. One for minecraft and the other pfSense. They'll need independent network interface per VM so 3 in total in your case.

Is th hosting environment a proper data centre? The reason why I ask it may be beneficial to go the Xeon route or at least a server board (not workstation) as you'll get IPMI which will give you BIOS level remote access - useful for OS reinstall or recovery
