Single CPU in dual socket board?

So I saw Linus's budget 8core vid, and thought I should use a similar set up for a mildly overkill NAS/file server. Companies ship single processor servers all the time and they work fine so I see no reason why this wouldn't be compatible. I was running a 771 dual socket with only 1 CPU before (HP DL360 G5 Xeon 5130). The nice thing is that you should be able to just add the second CPU whenever you want if you want. Also I would suggest one of the higher clocked X chips if you can like X5450, or the X5492 which are both LGA 771 compatible although they are power hungry at a TDP of 120W and 150W, but they perform well.
