I plan on upgrading my system's storage, so my plan is to have an M.2 Samsumg 950 Pro 250 GB as the boot drive.

But I dont know if having two Samsung 850 evos (250gb x2) will be faster.

Possibly, but definitely go with the 950 Pro. It's blazing fast and you aren't running the risk of loosing all the data when one of your SSDs fail.

Well I can tell you from what I tested yesterday that two Samsung 840 EVOs in raid 0 will give you about 1084 MB/s read and 1004 MB/s Write speeds (sequential) But heres the thing with two 250 gb ssds you get a combined storage amount of 500 gb well its i think 478 GB or something like that. Also raid splits the data usually to 128 kbs. (you can change this though) So your 4 kb random reads and writes will be as fast as well one drive. Because it requires a 128 KB chunk to write to both drives.
