If I use a 3.5mm audio splitter to connect both monitors to my mobo io audio will it cause problems?

Not necessarily just that you will hear Right and Left channels twice.

not likely, but there may be a problem with latency, which is very unlikely.  there should be no problem, is what im saying.

I prefer dedicated audio hardware over built in. That all depends on your budget and what you currently own.

i have enough for two Asus VG248HEs but should i just get acer ones without sound?

 

I kinda want some monitor audio but hate mixing and matching monitor brands

If it fits your needs yes, I'm not picky about brands though I have my favorites so I would get an Acer in your situation, apart from HEs discontinued I believe, so that's your choice there. If you want monitor audio then once more yes is my answer though splitting audio among multiple monitors will cause what I first mentioned.

just get it without sound and get some good speakers
