It depends on how you want the system to look. There is no "one size is better than the other". They both have pros and cons. I would say that the most commonly used size would be 13/10mm (3/8" ID 1/2" OD).

Wall thickness lets you bend the tubing with a tighter bend radius; 12/10mm will die if you bend it tight. large ID vs small ID is about flow rate, and won't affect your temperatures. All fittings are g1/4, but 16mm OD ones may not fit if there are two close together like with a y splitter or some pump tops/Res's. Thicker tube looks sexier.
