Thunderbolt is typically better but you have to consider compatibility and what it's going to be working with.

What resolution and frame rate is the video you are recording?  USB 3.0 should be more than enough to stream 1080/60p.

Disclaimer: I have no idea what sort of setups people use for the type of STREAMING that is being discussed here.  So I will assume that when you say "capture card" you are talking about a device that gets the video from the camera (web cam + GPU) onto your computer in a ready to live broadcast format.

 

But working with video production, when people ask about different types of cables, I think in terms of the bandwidth required to provide a video stream out of a video camera onto external devices (broadcasting equipment, displays, recording equipment, etc.)

 

USB 3.0's bandwidth is 5Gb/s, in video equipment a 3G SDI connection which is about 3Gb/s is enough to export 1080/60p videos.  So I guess a USB 3.0 bandwidth is more than what you need for 720/30p.  Thunderbolt 1.0 is 10Gb/s, 2.0 is 20Gb/s.

 

I don't know, I think I would be worried more about getting your video to the audience via the Internet rather than getting it onto your computer.

For quality I think it is better to focus on what sort of codec and container is used for the video and the resolution/bit rate.  I mean obviously if you plan to broadcast blu-ray movie or IMAX theater quality video, you will need some serious equipment.  But 720/30p isn't that high quality these days, and a media sharing platform like Youtube will do some processing on your video that may make it even worse.

 

Unless you are using a Macbook Pro with a small amount of USB/Thunderbolt ports (2 each or less) and you don't want to use hubs, stick to the USB capture device.  You will be able to use it with any computer.  Thunderbolt will limit you to computers which have Thunderbolt ports (i.e. 100% Apple and I guess a few non-Apple computers).

USB 3.0 will work, but if you can get Thunderbolt for $5-10 more than go for it.
