I want a high end Motherboard, with steel PCIE slots, really good audio and the highest quality components in it.

Onboard audio had gotten better over the years. A dedicated audio card is always better, but it also depends on how much you paid for. Buy a cheap $15 sound card then it would be no different than onboard. Get a card that's $100 and up and there is a difference compare to onboard.

I got a Sennheiser G4me one, I am not sure I would benefit from a sound card of DAC, I was going to get the ASUS Essence but I am not sure if it would make a difference to the sound quality compared to the MSI X99 Godlike, it is 50hz impedence headset

You still need a 100$ phone to reproduce it, though.

Maybe your right, but with my $20 Altec Lansing headset, I can hear the difference between my onboard and my sound card. It's 3D surround feature actually does work even when you use a headset. Also the game FPS is higher compare to using onboard audio.
