Transfering web hosting server. DNS question

So I'll move to a new server but I don't know how to setup things. Let me try to me make it clear... 

 

I'm currently on a shared hosting plan with whc.ca, emails, website and domain. I want to move my domain & emails to Hostgator and my website to a VPS on ohv.com

 

What's the procedure to get minimal hiccups ? Think I would need : 

  • Hostgator NS pointing to OVH IP (can I use OVH NS ?) 
  • Hostgator MX record pointing Hostgator IP (Can I use Hostgator NS ?) 
  • OVH MX record pointing to Hostgator IP (Or NS ?) 
  • OVH set to use external mail server

Is that right ? I'm kind of confused with NameServers vs IP. Anyway if anybody could give me some cues on how to proceed, that would nice :)
