which of these ssd sizes would you guys recommend as an ssd size (240gb or 480gb) for steam/game storage, Running the OS, boot up and maybe for some other programs. I will also have an hdd for mass storage and i will use the ssd for running some programs slightly faster and also boot up and OS.

It depends, if you want to RAID them together 2x 240 would do that while a single 480 wouldn't, if you're not going to RAID them it is a lot more convenient to get a single large one. Spending the extra cash for the larger one would be nice as 240 doesn't last long for me, it's so nice to have games start up fast.

Around 500GB provides plenty of room for OS, most used programs and some games. You can get them for good prices now too. 

Well it depends on the person, I filled up 500gb pretty darn fast, and most of my stuff is on my 2Tb HDD that I use for mass storage, but then again I have two Battlefield games and some more on them.

I stick with 120GB SSDs (I have 3 of them). I find them nice because I can store them all seperately.

How do you manage that? I like to have my stuff in one big crap pile. Don't you forgot where some stuff is?

I was planning on having one big 1tb hdd and a single 480 gb ssd the hdd for mass storage and the ssd for os/boot up and some games would that be fine?

Yes that would work great, I have a 2tb HDD and 4x 250gb SSDs, it can sometimes be confusing in BIOS to see which one you're using but oh well. With an HDD and an SSD in the BIOS it would be easy. Make sure you load windows into your SSD and make it a boot drive. Also in chrome (because who doesn't use Chrome) make sure you put the download settings to download to your HDD if you don't want it all on your SSD, or you can make it have a popup asking where you want to save it when you save something.

yeah thank you so much at the moment I am using a laptop without an ssd or anything and chrome,boot up and everything else takes ages so i can't wait to get my pc build complete!

Two dedicated to games (1 for steam, 1 for EA/Origin), 1 for OS + Adobe Creative Cloud. Everything else finds its way onto my HDD.
