Should I chose some other optical drive or not at all? I am a little confuse. and 16GB ram, I was planning on doing maybe a little bid of editing if possible. 

If not necessary, you could opt to not get an optical drive and save some money.

I make short films on YouTube, so the footage editing.

Me and my friends make short films but not that often and we use Vegas Pro. 

I'm not exactly sure what you mean when it comes to scale from that but if it's anything like just cutting clips together, 8Gb ram would be fine.

The motherboard and ram doesn't really affect performance for the most part. Brand doesn't really matter.
