Turns out the motherboard in my PC doesn't support overclocking. (apparently all HP PCs except for their gaming ones don't support overclocking) I was planning to buy the Intel i5 3570K so this really sucks.

Can I still use it, just without overclocking?

yes. It will still work, if you want to overclock you'll just need to get a Z77 motherboard.

Some OEMs make PCs with K CPUs + H81 mobos for some reason

You like the "look"? Are you aware that you can't see a cpu from outside the case, and in fact even if you had a window it would be completely covered by the heatsink? If you want an i5, spare your money and go for a non-k version if your motherboard doesn't support OC.

Yes it does? Not enough wattage= no overclocking...

Perhaps you misinterpreted. 

 

CPU overclocking doesn't take that much extra power, unless you have a Diablotek and/or are planning to hit 8GHz then PSU isn't a huge issue

What do you mean then? If it's performance, as I said you should spare your money and go for the cheaper non-k version, they perform exactly the same if you don't overclock.
