I can see that some specific gpu's have 8gb of ram, What is the new standard, How much do I need, and when can We expect 10gb?

You NEVER need more then 4GB of VRAM for gaming, Higher resolution like 4K or large amounts of AA eats up VRAM, but for 1080p 2GB is fine, that's why more of the mid range cards have 2GB, and higher end 1440p/4K cards like the 980 have 4.

 

Edit: Unless you are playing shadow of morodor with the ultra high end texture pack which requires 6GB, Video editing cards like the Titan and Titan Z are the cards with the large amounts of Vram.
