The chipsets are backwards compatible aren't they, unlike the cpus?

No sandy bridge will not work with z97, reason being, the socket is different.

2600k is socket LGA 1155.
z97 motherboards are socket LGA1150.

Intel doesn't do backward compatibility with their sockets.

Yes, as long as you use a 1155 motherboard with the 1155 cpu, it will work.
