I have just bought a noctua nh-d14 and taken off my old cooler. Of course there is some thermal paste left on the Cpu. Should I take it off with some alcohol and earsticks or do I have to look out for something special? Is there anything I have to be careful with than please write it to me.

Isopropyl alcohol (as pure as you can)

Microfiber cloth or Earsticks

If you don't have microfiber cloths ear sticks work fine. It just takes a while.

Sorry, but I forgot to ask if somebody also has some tips for putting new thermal paste on. Do I just put it on and spread it out or what?

Tiny pea sized dot in the middle will work best, putting the cooler on the cpu spreads it out evenly.

alcohol and any cloth that does not leave fibers there are a lot of varying opinions on how much thermal paste to use check the manual and if not i just use a small amount the size of an uncooked grain of rice linus has said to use that one in many of his videos and i think it works just fine
