Hey I was wondering if it was possible to have digital audio headphones (I'm using Corsair 2100s) work with a 3.5mm jack on say a phone through an adapter.

In theory, the thing you need is an analog-to-digital (ADC, basically the opposite of a DAC) converter, to bridge the connection. I don't think getting one is a reasonable solution to your mobile needs though (assuming you're using it mobile, because you mentioned a phone)

The viable solution would be what Mr.Tower said above. The idea is not using the phone's analog 3,5mm out at all, instead using the OTG to extract the digital audio data directly from the phone, and feed it to your digital headphone.

Something like this post: http://linustechtips.com/main/topic/151857-ipadidevice-mobile-audio-solutions-image-heavy/ (scroll down to the 4th solution and beyond)
