I am very close to deciding to buy headphones, and I just wanted to make sure if there was any better options for headphones for classical in the ~$300 price range. 

I plan to buy HD600s and Mayflower's Amp/DAC, does that seem like the right decision?

Headphones just like food will mostly depend on your preferences and your ability to (not sure on how to put this) hear specific sounds... Best recommendation one can give is to find a local music store that has a good variety of headphones up for testing (GuitarCenter and etc...). Test it out and find the one that best soothes you. Just my opinion though.

Well what were you looking for? I mean, really? There isn't a "best" headphone for classical so all it comes down to is your personal preferences. Which you didn't bother to share with us. As the person above suggested, you need to actually try a variety headphones before buying if it really matters to you to get it right the first time.
