I'm working on a new work station build for my dad, he works with photography and Photoshop. He wants the build around $2000 and also if possible able to run OSX. I have included two build bellow that I think would be good for this. I'm not sure about hackinthoshes so if you could give me suggestions to make the components work with Mac that would be great!

Go with a xeon, cheaper, and better reliability.

Also, go mitx with a ft03 mini case, as that is mac pro ish

I'm not sure about any of these components since I've never done this nor really given it the time looking at what others have made.

 

Though, Lifehacker.com has an interesting article (maybe not workstation components) with tips along the way and some components guaranteed to work. Though, again these guaranteed examples aren't workstation hardware so it may not be what you are looking for. But it may help you in other ways. Maybe how and what to look for and also how to actually install it (the os) later on when components are bought.
