Games, programs or workloads that it will be used for: 
Games like Forza Horizon 6, Horizon I & II, Wukong, upcoming Witcher 4, Assassins creed, Marvel Rivals. (Majority workload - 4K/60 for cinematic AAA, 1440p high-refresh for competitive)
Workloads involve CAD modelling (Fusion and SOLIDOWRKS mostly), ANSYS (light work and occasional) and Blender 3D  (Bit heavy on rendering but also occasional).
Bit of ROS-related work & software dev as well, but planning to dual boot with Linux for that.

Note :

- I do buy a lot of components from China (taobao/Tmall/physical store) where I go for work every few months. Majority of this rig has been designed considering Chinese companies, vendors and current pricing. Headed to China in May first week, and aiming to buy all the pending stuff then.

- Yeah, current prices for 1X16 GB stick is more than 2X8, which are already high enough. Would it be fine to just buy single 16GB stick and buy another later ? Would single channel vs. dual channel make a big difference in performance for games ?
- Also 9070XT is a bit pricey for my budget. Would 7900XT or 9070 be good enough ? Those two are cheaper than 9070XT.

I'd personally grab 1x16GB DDR5 vs 2x8GB.  Add another 16GB stick later, for 32.

 

With DDR5, you don't lose much going 1 stick as that single stick can be dual channel by itself if what I read is true...

9070 will work fine.

I'm not sure single stick can be dual channel, what it can be is dual rank.

I am planning to buy a single 16GB stick for now, and get another one later ones prices drop. But I can't guarantee I will get the exact same RAM stick later. If I get another stick which is a different die (M-die, A-die etc.) or a different CL timings values like C28/C30/c32 etc, how much of an impact would that make on my system ?

how much performance loss will you experience heavily depends on what games will you be playing also .
for example 9700x is loosing 35% of its performance in marvel rivals , but in some other games it´s just 5% (but that´s with rtx 5090) .
lucky for you X3D chips are less sensitive to single stick vs dual channel due to massive cache compared to regular CPUs
- so you should be totally fine with a single stick for now .

ideally you should try to find the stick with the same specs from the same manufacturer .
but even if you don´t there is still a pretty good chance it will work in dual channel 
the faster memory module of the two should adjust and sync its speed and timings with the slower stick -
(or they both work at default DDR5 speed)
usually it either works from the get go or it doesn´t work at all ...
after you verify that the dual channel is working at synced default speeds
you can go from there and try to set EXPO profile and see if it works .
